Today is National Ice Cream Day and I LOVE ice cream. It’s my dad’s favorite dessert, so growing up we always had ice cream in the house. My brother and I love Mint Chocolate Chip. The green kind and NOT the white. There is a difference (in my head anyways). Next favorite is Cookies and Cream. My mom is really great in the kitchen that she is at the point now where she makes her own ice cream and ice cream cakes. She called me one day about a month ago to tell me about how she make red velvet ice cream whoopie pies (drooling) and my response was “Why haven’t you made them for me before?”
In honor of my mom, I wanted to share her recipe for the whoopie pies, but after she explained it to me, it seemed a lil too complicated, so I’ll revisit that recipe another time. In the meantime, here’s some of my favorite ice cream recipes.
First up is a yummy recipe from Chef in Training for a Krispie Ice Cream Dessert. While the recipe calls for vanilla ice cream, vanilla is a little too plain for me, so I like to switch up the flavor.

Clearly I like a little crunch in my ice cream desserts. Next up is the Butterfinger Delight from Can’t Stay Out of the Kitchen.
Last, but definitely not least is the Brownie Oreo Ice Cream Bars from Chelsea’s Messy Apron.

One of my favorites that isn’t on this list is Captain Cookie. Imagine salted caramel ice cream surrounded by two hot and freshly baked chocolate chip cookies. Yummy. Might have to stop by their Pennsylvania Ave location later today to get my fix.
