So I am a woman of my word and as promised I’m finally posting the recipe for the Stuffed Salmon I mentioned a couple weeks ago. I was trying to get this post up way earlier in the week, but life has it’s own plans.
Spinach & Feta Stuffed Salmon
2 oz. fat-free cream cheese
½ cup crumbled feta cheese
1/3 cup chopped onion
½ cup chopped baby spinach
4 salmon fillets
salt and pepper, to taste
1. Preheat oven to 350 ̊. Coat baking dish with cooking spray.
2. Combine cream cheese and feta with a fork, mix until blended. Add onions, spinach, and seasonings, combining well.
3. Split each piece of salmon in half lengthwise without cutting all the way through (make a pocket). Fill each pocket, then place the top piece of the salmon back over the filling and place into the baking dish.
4. Sprinkle a little salt and pepper and whatever other seasonings you want on top of the salmon and then bake in the oven for 20 mins or until flaky and done.
**As you can see, I used one big piece of salmon, split it lengthwise and stuffed it that way. So you can stuff individual pieces or one whole piece of salmon.
This recipe is super tasty. The filling is delish! I loved it so much I ended up stuffing some mini peppers with the filling as well.
