I keep taking these unexpected blogging breaks. But life has a way of changing the best laid plans. It’s been a month since I started my new job and I LOVE it. The people are friendly and the benefits are great. I have to say I truly feel blessed to get a job with this company, especially because I still get to do what I love which is plan events and conferences. My first business trip is to Long Beach, California. Being the planner that I am, I have already started making a list of my travel essentials (more on that later).
Since I started the job I went through a breakup (UGH) and I got a trainer (my ex – don’t ask) [can’t pass up free training]. So I’m on this serious workout schedule five days a week. The best time for me to workout seems to be early morning. Before the sun has even came up. It’s been a struggle to get out of bed some mornings, but this fat I have acquired has got to go. Giving my fat an eviction notice.
In addition to working out, I’m also making sure I am eating healthy. The only way I can ensure I eat healthy is to meal plan. I am serious about my meal planning; even created a Pinterest board dedicated to Meal Prep which you can find here. I start thinking about my menu for the next week on Friday. Make my grocery list and go shopping Saturday or Sunday and the cooking goes down Sunday.
This week I spent way too much time in the kitchen, but this week is special. My trainer decided that I should only drink water and stay away from bread, sweets and meat for one week. YES MEAT! Initially I resisted when I heard no meat. Everyone who knows me knows that I am obsessed with chicken and love all types of meat. My lunch or dinner don’t seem complete without meat. But I finally gave in and decided to try it. For ONE week only. I went out and bought fresh salmon, frozen salmon, tilapia, mussels and shrimp (I like to be prepared).
For dinner I tried a Spinach and Feta Stuffed Salmon recipe that I saw on Instagram. One word: Amazing! I promise I will post the recipe this week. I also made my Corn, Tomato and Zucchini salad, shrimp lettuce wraps, zucchini fritters and these gluten-free (don’t tell my mom I’m eating gluten-free) Almond Oatmeal Protein Bars. Today is day three with no meat. I definitely miss meat. I give vegans all the credit in the world. I crave sweets, but I’ve been eating fruit to try and curb that craving. Pray for me. I hope I can resist all week.
