Hope you had a great weekend. I spent a large portion of the weekend meal prepping. I’m really trying to get back on track with my fitness and eating better; especially when I realized that spring is only 26 days away. EEEK! And since summer bodies are made in the winter, I got work to do.
I posted this a couple of years ago, but it still applies.
Since I’m working on my getting my body right, I spent a good portion of the weekend cooking. I’ve been craving scones, so I decided to make Peaches and Cream Scones. Remind me NOT to do that again. The taste was great, but it was too much work. Have you ever tried to cut-in butter without a pastry blender? I’ll share the recipe later in the week just in case you want to be adventurous and try it. LOL
I also made a corn, zucchini and tomato skillet; it’s the warm version of my summer salad that I love so much. I’ll share that recipe soon too. I did some homemade honey buffalo meatballs; I’ve never been a huge fan of meatballs, but these have won me over. Also on the menu was roasted green beans and peppers with garlic & ginger and lastly a cheesy broccoli and pancetta bake. Soooooooooooo good. Recipes will be shared as soon as I type them all up.
So in addition to eating better and cutting out SOME sugar, I’m back to my weekly workouts at the gym. I’m aiming for at least three times a week and I’ve decided to do a squat and arm challenge next month. I’ll be sure to share the challenge with you just in case you want to participate. Get ready to start next Tuesday!
